Literally stealing the secret sauce, that makes product what they are. Companies invest vast amounts of resources in designing products and services. In many cases relying on Operations Technology (OT) and Industrial Control Systems (ICS) to manage the manufacturing process. From managing temperature, pressures, flow rates, mixing ingredients, packing and transporting raw materials, part finished and finished products around factories. All information that is critical Intellectual property to a company. If you ever want to know how they make WD 40, mix the ingredients for that KFC coating or how your Twinkies are made hack then OT and ICS systems.
Or worst still, as this article points out, target the OT and ICS systems within Critical National Infrastructure. CNI that underpins national security.
